Want to eat lighter for the summer?  Get into that bathing suit and feel good?  Here is a recipe that I have tweaked a little bit to make it more figure friendly.

 

Summer Sizzle Dip

1 pkg of ground turkey or ground chicken

1 pkg. taco season

1 small box of 2% Velveeta Cheese

1 bottle salsa

1 small can fat free or low fat Cream of Mushroom soup

 

Brown meat, drain and put taco seasoning on meat.

Add box of velveeta, can of soup and salsa.  Heat on medium heat til cheese is melted and stirred in .

simmer on low for 10 to 15 minutes and serve with blue corn chips or Tostitos!

Jodie’s World Famous Meatloaf.  (One of Kevin’s Personal Favorites)

1/2 pound ground beef

1/2 pound ground pork

1 egg

1/4 c bread crumbs, I use Italian flavor

1 tablespoon ketchup

1 teaspoon McCormick's dry meat seasoning

topping

1/2 c ketchup

3 heaping tablespoons brown sugar

mix all together and spread in a pan...spread topping

evenly

 

Bake at 350 for 45 minutes or til done.

 

Yummy!

Holiday Quick Fixes

Cranberry Relish

 1 can jellied cranberry sauce

1 can mandarin oranges

1 cup pecans

 

mix together and chill.  Great by itself or over leftover turkey and stuffing!!

Stuffed Cranberries

1 Can jellied cranberry sauce

1 pkg. cream cheese

1/4 cup mayo

1 cup pecans

 mix cream cheese, mayo and pecans together.

slice cranberry sauce , in between slice smear the

mixture above.  Really pretty on the table with the red

and white color.

Enjoy!!

 

 

 

Jodie's Artichoke Bake

2 can artichoke hearts

1/2 cup mayonnaise

1/2 parmesan cheese

 

Drain artichokes and place in a baking dish.

In a separate bowl mix cheese and mayo and

spread on top of hearts.

Bake at 350 degrees for 30 minutes or until brown.

Serve hot and enjoy!!

Rice & Mushrooms (serves 4)

Preheat oven to 350 - can adjust time & temp if baking something else with it

 1 stick butter or margarine

1 onion

1 heaping cup Uncle Ben's Rice (not minute)

1 can Campbell's Consomme Beef soup

1 can mushrooms - do not drain (I use stems & pieces)

1 tsp salt

1/4 tsp pepper

 Saute cut up onion in butter with salt & pepper till clear.  Add rice, soup & mushrooms with juice.  Cover & bake for 45 mins.  Let sit for 10 mins - stir & serve.  Wonderful with steak, salad & garlic bread! 

 

Sour Cream Coffee Cake

CAKE                                                    TOPPING

                                                               

1       c. sugar                                                ¼ c. sugar

¼ pound butter                                  ½ tsp. cinnamon

2 eggs                                          ½ c. chopped nuts                      

8 oz. sour cream (commercial)

2 c. sifted flour

1 tsp. baking soda

1 tsp. baking powder

1 tsp. vanilla

Cream together butter and sugar.  Add eggs and sour cream.  Beat until smooth.  Sift together dry ingredients and add to egg mixture.  Add vanilla and blend thoroughly.  Grease a small, tube pan (9 x 3.5 inches) with shortening or non-stick baking spray.  Pour half of the batter into the tube pan and sprinkle with half of the topping mixture.  Add the remaining batter and sprinkle with the remaining topping mixture.  Bake at 350 degrees for 35 minutes.  Serves 6-8.

Note:  Reduced fat sour cream or yogurt can be substituted for regular sour cream.
