tickets for each client that sends us a recipe for the newsletterRice & Mushrooms (serves 4) Preheat oven to 350 - can adjust time & temp if baking something else with it 1 stick butter or margarine 1 onion 1 heaping cup Uncle Ben's Rice (not minute) 1 can Campbell's Consomme Beef soup 1 can mushrooms - do not drain (I use stems & pieces) 1 tsp salt 1/4 tsp pepper Saute cut up onion in butter with salt & pepper till clear. Add rice, soup & mushrooms with juice. Cover & bake for 45 mins. Let sit for 10 mins - stir & serve. Wonderful with steak, salad & garlic bread!
Sour Cream Coffee Cake CAKE TOPPING
1 c. sugar ¼ c. sugar ¼ pound butter ½ tsp. cinnamon 2 eggs ½ c. chopped nuts 8 oz. sour cream (commercial) 2 c. sifted flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. vanilla Cream together butter and sugar. Add eggs and sour cream. Beat until smooth. Sift together dry ingredients and add to egg mixture. Add vanilla and blend thoroughly. Grease a small, tube pan (9 x 3.5 inches) with shortening or non-stick baking spray. Pour half of the batter into the tube pan and sprinkle with half of the topping mixture. Add the remaining batter and sprinkle with the remaining topping mixture. Bake at 350 degrees for 35 minutes. Serves 6-8. Note: Reduced fat sour cream or yogurt can be substituted for regular sour cream.
